I'm always on the look out for tasty quick recipes to make when I get home from work, and I often use the
Jamie Oliver twenty minute meals App on my iPhone. This pasta dish; Bacon and Asparagus Pappardelle is one that I discovered a few weeks ago and we have had it at least three times since. Its quick, easy and yummy!

Ingredients
250g dried Pappardelle (although I think it works with any pasta!)
4 rashers of smoked streaky bacon
1 small bunch of asparagus
2 heaped tbsp of crème fraiche (I use half fat)
30g Parmesan (optional)
Olive Oil
Salt and Pepper
Method
Cook your pappardelle in boiling salty water according to instructions. Give it an occasional stir to make sure none of the pasta is sticking together. Meanwhile...
Roughly chop the bacon and add to the hot frying pan with a splash of olive oil. Fry until crispy and golden and then turn the heat off and leave to cool slightly. Meanwhile...
Snap the woody bases off the bottom of the asparagus spears and discard, then thinly slice the tender stems leaving the tips whole.
Add the crème fraiche to the pan of bacon and mix together. Leave for now.
Finely grate the Parmesan and put to one side
About a minute before the pasta is ready, add the sliced asparagus stalks and tips to the pan to quickly cook.
When your pasta and asparagus is done, scoop out a cupful of water for later then drain everything in a colander.
Tip the pasta and asparagus into the frying pan with the bacon and crème fraiche. Throw in half your grated Parmesan and stir everything together. (If the sauce is a bit thick then add a splash of some of the reserved cooking water to thin it out slightly)
Taste and season with salt and pepper and top with the remaining Parmesan.
